The phone is a metallic silver Samsung GT-S5611, but the Samsung logo has been removed from the phone used in the film.

James Bond uses a Sony Xperia Z5 mobile phone in SPECTRE.

The phone can briefly be seen in the Aston Martin DB10, when Bond calls Moneypenny while being chased by Hinx. It's not 100% confirmed if Bond uses the Z5 or the smaller Z5 Compact.

When M calls Bond in Venice (at about 2h00m55s in the movie Casino Royale), we hear the ringtone of his K800i mobile phone. Download the ringtone, a Sony Ericsson ringtone named Doctor's Phone, below as mp3 or midi file. In the movie, the ringtone has a slightly higher pitch.

When M and Bond visit Mitchell's apartment in the movie Quantum of Solace, we can hear M's ringtone on her Sony Ericsson G700 (Mineral Grey).
